Autumn Spiced Biscuits

 

Autumn is here. And I love it! It’s time for foraging, cosy knits and comfort food. And now that the days are shortening and getting gradually darker, it’s the perfect time for a spot of baking too! These are my favourite autumn spiced biscuits, they are super easy to make and won’t hang around long either!

Here’s the recipe!

Ingredients:

125g butter, softened

85g soft brown sugar

160g golden syrup

310g plain flour, sifted

2 tsp ground ginger

1 tsp bicarbonate of soda

Method:

  1. Preheat the oven to 180 degrees / fan oven 160 degrees or gas mark 4.

  2. Place the softened butter and sugar in a bowl and beat until light and creamy.

  3. Add the golden syrup, flour, ginger and bicarbonate of soda and mix to form a smooth dough. ( It may seem dry at first, but, as you mix, it will eventually combine into a ball. )

  4. Divide the dough in half. Wrap each in clingfilm and place in the fridge until firm.

  5. Take one piece of dough out of the fridge and roll out on a floured surface to around 4mm thick. ( I like to roll the dough out in batches as it seems to warm up quickly and it becomes difficult to cut out the shapes. )

  6. Cut out shapes using leaf cutters ( mine were bought from Amazon ) and place on a baking tray lined with greaseproof paper. Use a wooden skewer or a knife to mark out the leaf veins.

  7. Repeat steps 5 and 6 with the other piece of dough left in the fridge and any scraps.

  8. Now place in the oven and bake for 8 - 10 minutes until golden. ( Don’t panic if they puff up and look as if they are loosing their shape - it happens to me every time but they tend to go down when out of the oven. )

  9. Once out of the oven place on a wire cooling rack. If you are wanting to hang any biscuits now is the time to put a little hole in the top using a cocktail stick whilst still warm.

Now they are cool, temptation may have set in… but if you can resist a little longer you can make an autumn display by threading through a thin string and hanging them off a stick with other seasonal finds…

We used leaves, poppy seed heads, rosehips and flowers from the allotment!

Now the only thing missing…. tea!

And there you have it! Tea and biscuits! What could be better on an autumnal night!
